Ingredients

3 cups rolled oats

1 cup raw pistachios, roughly chopped

½ cup shredded coconut

¼ cup pumpkin seeds

1 tsp ground cardamom

½ tsp ground cinnamon

½ tsp sea salt

½ cup From the Ground Golden Date Syrup

¼ cup melted coconut oil

1 tsp vanilla extract

Instructions

  1. Preheat oven to 165°C (325°F) and line a baking tray with parchment paper.
  2. Combine oats, pistachios, coconut, seeds, and spices in a large bowl.
  3. In a small saucepan, warm the golden date syrup, coconut oil, and vanilla until smooth.
  4. Pour the wet mixture over the dry ingredients and stir until evenly coated.
  5. Spread the granola on the tray in a single layer, pressing gently to form clusters.
  6. Bake for 20–25 minutes, stirring halfway through, until golden brown and crisp.
  7. Let cool completely before storing in an airtight jar.
